Three-layer Formula 1 pudding: an official Herbalife dessert recipe

Three Formula 1 flavours, set one on top of the other. An official Herbalife dessert recipe: one scoop each of Vanilla Cream, Strawberry Delight and Banana Cream, 300 ml of skimmed milk and 7.5 g of gelatine. Makes two.

It looks like far more work than it is. Each layer is the same three steps, and the only real requirement is letting one set before you pour the next.

The recipe

Makes 2 · an occasional treat, not a meal

  • 1 scoop (13 g) Formula 1 Vanilla Cream
  • 1 scoop (13 g) Formula 1 Strawberry Delight
  • 1 scoop (13 g) Formula 1 Banana Cream
  • 7.5 g gelatine — 2.5 g per layer
  • 300 ml skimmed milk (1 % fat) — 100 ml per layer
  1. Vanilla layer. Warm 100 ml of the milk gently, add 2.5 g of gelatine and stir until completely dissolved. Stir in the Vanilla Cream Formula 1, mix thoroughly, divide between two dessert glasses and refrigerate until set.
  2. Strawberry layer. Warm another 100 ml of milk, dissolve another 2.5 g of gelatine in it, stir in the Strawberry Delight. Pour on top of the set vanilla layer and return to the fridge.
  3. Banana layer. Dissolve the last of the gelatine in the final 100 ml of milk, stir in the Banana Cream, pour over the set layers and chill again.
  4. Finish with fresh berries and mint if you like.

The two things that go wrong

  • Pouring too early. If the layer underneath has not set, the colours bleed and you get one muddy pudding instead of three stripes. Give each layer proper time in the fridge.
  • Pouring too hot. Let each mixture cool to just warm before it goes on top of a set layer, or it will melt the one beneath it.

Warm the milk gently, not to a boil. Gelatine dissolves well below boiling point, and protein powder in boiling milk goes grainy.

Which flavours

The recipe uses Vanilla Cream, Strawberry Delight and Banana Cream because they set into three clearly different colours. Any three Formula 1 flavours will work, but pick ones that look different from each other, or you lose the point of the thing.

This is a dessert. Herbalife categorise it themselves as an occasional treat. Formula 1 is a meal replacement only when prepared as its label instructs — two scoops with 250 ml of milk. And Herbalife's own note is that when their products are used in recipes, the nutritional values on the label no longer describe what you end up eating.

Allergens

Formula 1 contains soy and oat. The recipe adds milk. Standard gelatine is an animal product, so this is not suitable for vegetarians or vegans as written. Full declarations are on the product page.

Frequently asked questions

How long does each layer take to set?

Give it at least 30 to 40 minutes in the fridge before pouring the next one, and check it is firm to a light touch. Rushing is the main reason the layers bleed.

Can I make it vegetarian?

Not as written — standard gelatine is not vegetarian. Agar sets differently and at a different ratio, so it is not a straight swap, and that would be our substitution rather than Herbalife's recipe.

Can I make it the day before?

Yes. It keeps well covered in the fridge, and making it a day ahead removes all the waiting on the day.

Is one of these a meal?

No. Herbalife class it as an occasional treat. If you want a meal, make the shake as the label describes.
